I&#039;ve always eaten the smoothies right after making them so I don&#039;t know what happens if you keep them in the fridge, but the kefir tends to separate a bit, with the thin whey floating to the top and the heavier bits (like little date pieces) settling to the bottom. If you&#039;re planning to make the shakes in advance, this separation might change their presentation when you give them--it might be worth doing a test to see how well the shake holds its shape.</description>
