Something I have heard:  If you add fresh veggies to a batch of fermented veg that&#039;s already in progress, keep in mind that the salt levels have changed- you should add more salt to your brine if you add new vegetables.  Also, the newer vegetables shouldn&#039;t be anything dense like squash or carrots because they are a few steps behind the rest of the veggies, and they will be hard while the others are soft.
